Chapter 4: Perform post banqueting tasks
📚 3 Topics
⚑ What you will be able to do

By the end of this chapter, you will be able to:

  • strip and sort linen correctly according to the required standards
  • clean and dry tools, equipment, and materials following proper procedures
  • store tools and equipment appropriately in their designated places
  • clean the restaurant thoroughly using the correct procedures

Mastering these skills ensures a clean, organized, and efficient environment that helps every event run smoothly and leaves a great impression on guests.

Performing post-banquet tasks is a critical phase in food and beverage operations that ensures venues are restored to optimal condition promptly and efficiently. In Kenya's dynamic hospitality industry, from hotels in Nairobi to conference centres in Mombasa, effective post-event management affects customer satisfaction and operational costs. Among these tasks, stripping linens and sorting them properly supports hygiene standards and prepares the venue for subsequent events. This chapter explores the detailed processes involved in linen management after banquets, highlighting best practices relevant to Kenyan food and beverage professionals.

4.1 Stripping Linens and Sorting

Stripping linens is the removal of all used table cloths, buffet cloths, slip cloths, seat covers, skirting and napkins from the function room once guests have left and tables have been cleared of equipment. Sorting is the separating of the stripped linen by type, count and condition so that it can be counted back to the linen room, sent to the laundry correctly and checked for damage. Done carefully, it protects expensive linen, keeps the count accurate so losses are noticed at once, prevents soiled linen from contaminating clean areas and lets the room be cleaned and reset quickly. Example: after a graduation party at a guest house in Mau Narok, the banqueting team strips 60 tables, counts the linen into labelled bags by type and signs it over to the laundry before midnight.

Table cloths

Table cloths are stripped only after all crockery, cutlery, glassware, accompaniments and décor have been removed from the table.

  • Check for items: Shake nothing out until you have checked the cloth for cutlery, jewellery, phones or other guests' property left in the folds.
  • Fold inwards: Lift the corners and fold the cloth inwards towards the centre so that crumbs and food remain inside and do not fall on the floor.
  • Remove moltons separately: Lift moltons after the cloth and keep them apart, as they are washed or brushed differently.
  • Sort by size and colour: Group cloths of the same size and colour together, for example all 3 m round white cloths.
  • Separate stained cloths: Put cloths with wine, oil, candle wax or sauce stains in a separate bag marked for stain treatment.
  • Count: Count cloths in tens and record the number on the linen return sheet.

Buffet cloths

Buffet cloths are large and heavy, so they are handled by two people and only after all food, chafing dishes and display items have been removed.

  • Remove from the end: Two staff lift the cloth from each end and fold it inwards along its length.
  • Check for burns and wax: Look for scorch marks from chafing dish fuel and wax from candles, which need special treatment.
  • Keep away from the floor: Never drag a buffet cloth across the floor, where it picks up dirt and may tear.
  • Bag separately: Place buffet cloths in their own bag, as they are often laundered and ironed separately because of their size.
  • Record: Count and record them on the linen return sheet.

Slip cloths

Slip cloths are smaller and often stained, because they are used to cover spills during service.

  • Collect from every table: Slip cloths are easily missed or mixed up with napkins, so each table is checked.
  • Separate by colour: Coloured slip cloths are kept apart from white linen to prevent colour running in the wash.
  • Treat stains: Stained slip cloths are placed with other stained items for pre-treatment.
  • Count: Count them separately from table cloths on the return sheet.

Seat covers

Seat covers are removed from every chair after the guests have left, together with any sashes or ribbons.

  • Remove sashes first: Untie and remove sashes and keep them apart, as they may be delicate or hired.
  • Ease the cover off: Lift the cover off from the back so that stretch fabric is not torn or stretched out of shape.
  • Check for damage: Look for tears, burns, chewing gum and heavy food or drink stains.
  • Bundle in tens: Fold or roll covers and tie or bag them in tens for quick counting.
  • Keep hired covers apart: Covers hired from outside decorators are kept separately and returned to the supplier.

Skirting cloths

Skirting cloths are unclipped from buffet, head and registration tables after the top cloths have been removed.

  • Unclip carefully: Remove clips or pull the Velcro gently from one end so the pleats and the Velcro strip are not damaged.
  • Collect the clips: Gather skirting clips into a box so none are lost.
  • Fold or roll: Fold pleated skirting along its pleats or roll it loosely to reduce creasing.
  • Check the hem and Velcro: Note any loose stitching, torn hems or worn Velcro for repair.
  • Bag and count: Bag skirting by colour and length and record each piece on the return sheet.

Procedure for stripping and sorting linens

  1. Clear the tables: Remove all crockery, cutlery, glassware, accompaniments and décor before any linen is touched.
  2. Wear protective equipment: Wear gloves when handling heavily soiled linen or linen with broken glass in it.
  3. Strip table by table: Work in a set order across the room, removing seat covers, slip cloths, table cloths and moltons.
  4. Collect napkins: Gather napkins separately, checking under tables and chairs for dropped napkins.
  5. Shake out over a bin: Shake crumbs into a bin or onto a clearing tray, never onto the floor or near food.
  6. Sort by type, colour and condition: Place linen into separate bags or trolleys for each type and colour, and keep stained, damaged and wet items apart.
  7. Count and record: Count each type and fill in the linen return sheet, comparing the figures with the linen issued for the function.
  8. Report shortages and damage: Report missing or damaged items to the supervisor so they can be traced or charged to the client.
  9. Send to the laundry: Take bagged linen to the laundry or linen room on trolleys and have the count signed for.

Sorting linen by condition

  • Lightly soiled: Normal food crumbs and light marks; washed on the standard cycle.
  • Heavily stained: Wine, oil, sauce, lipstick or wax stains; marked for pre-treatment before washing.
  • Damaged: Torn, burnt or frayed items; set aside for mending or condemning and recorded.
  • Wet: Linen soaked by spills; bagged separately and sent to the laundry at once to prevent mildew and odours.
  • Contaminated: Linen soiled with vomit, blood or other body fluids; handled with gloves, placed in a sealed, labelled bag and washed separately at high temperature.

Handling and transport of stripped linen

  • Use laundry bags and trolleys: Carry linen in bags or covered trolleys, never in armfuls against the uniform.
  • Keep clean and soiled linen apart: Soiled linen must never touch clean linen, food or clean equipment.
  • Lift safely: Do not overfill bags; bend the knees and keep the back straight when lifting.
  • Deliver promptly: Send linen to the laundry the same day, as damp, stained linen left overnight develops mildew and permanent stains.
  • Sign over: The laundry or linen room checks the count and signs the return sheet, and a copy is kept in the banqueting office.

Chapter Summary

This chapter focused on the essential post-banqueting tasks that ensure efficient and hygienic event operations. It began by highlighting the importance of stripping linens carefully and sorting them according to type and condition to facilitate proper laundering and reuse. The discussion then moved to the cleaning of tools, equipment, and materials, emphasizing thoroughness to maintain hygiene standards and prolong the lifespan of these items. Proper storage of all tools, equipment, and materials was addressed next, underlining organized arrangements that support easy access and prevent damage. Finally, the chapter covered cleaning the restaurant and service areas after events, ensuring these spaces are restored to a clean and welcoming state. Attention to item quantity management was also included, stressing accurate tracking to support operational efficiency and inventory control. Together, these tasks form a critical part of post-banqueting operations that uphold service quality and safety.
