Choux pastry is a fundamental element in the repertoire of food and beverage operations professionals, particularly those specializing in pastries. Mastering its preparation opens opportunities to create a variety of classic and innovative desserts that appeal to diverse clientele in Kenya’s hospitality sector. This chapter provides an in-depth exploration of choux pastry, emphasizing its technical definition and the critical hygiene practices essential for producing safe and high-quality products in professional kitchens.

4.1 Definition of terms

Knowing the terms used in choux pastry work allows pastry cooks, supervisors and trainers to communicate clearly, follow recipes correctly and describe faults precisely. Choux pastry is unlike the other pastries in this unit: it is not rubbed in or laminated, but cooked twice, first in a pan and then in the oven, and it rises by steam alone. Example: a patisserie in Nyali uses the same terms on its recipe cards and in staff briefings, so a new cook knows exactly what "panade" or "dropping consistency" means.

Choux pastry

Choux pastry (pâte à choux, from the French for "cabbage paste", after the shape of the baked buns) is a light, hot-cooked paste made from water or milk, fat, flour and eggs, which puffs up during baking or frying to form crisp, hollow shells. Water and fat are brought to the boil, flour is beaten in and cooked to a smooth paste, and eggs are then beaten in gradually until the paste is soft, glossy and pipeable. In the hot oven the water in the paste turns to steam, the eggs and cooked starch stretch and then set, and the result is a hollow case with a dry, crisp shell that can be filled with cream, custard or a savoury filling.

  • No chemical raising agent: Choux pastry uses no yeast or baking powder. Steam is the only raising agent.
  • Cooked twice: The flour is cooked in the pan before baking, which gelatinises the starch so the paste can hold steam and form a hollow centre.
  • Soft paste, not a dough: It is piped or spooned, never rolled or cut.
  • Hollow when baked: A good choux bun is light, hollow and dry inside, ready to be filled.
  • Sweet and savoury uses: It is used for éclairs, profiteroles, cream buns, choux rings (Paris-Brest), gougères (cheese puffs), churros and beignets.

Related terms in choux pastry work

These terms are used throughout the rest of this chapter. Example: a training hotel in Iten tests its pastry trainees on these terms before they are allowed onto the dessert station.

  • Panade: The cooked paste of water, fat and flour before the eggs are added.
  • Gelatinisation: The swelling and thickening of starch granules when they are heated with water, which makes the panade smooth and able to hold steam.
  • Dropping consistency: The correct softness of the finished paste: it falls slowly from a spoon in a thick ribbon and holds a "V" shape when lifted, soft enough to pipe but firm enough to hold its shape.
  • Piping: Forcing the paste through a piping bag and nozzle onto a tray to make even buns, fingers or rings.
  • Éclair: A finger-shaped choux case, filled with cream or pastry cream and topped with fondant or chocolate.
  • Profiterole: A small round choux bun, filled with cream or ice cream and usually served with chocolate sauce.
  • Croquembouche: A tall cone of small cream-filled choux buns held together with caramel, served at weddings and celebrations.
  • Gougère: A savoury choux puff with grated cheese mixed into the paste.
  • Beignet: A spoonful of choux paste deep-fried until puffed and golden, then dusted with sugar.

🔒4.2 Hygiene practices

Choux pastry products are among the highest risk items a pastry section makes. The paste is rich in eggs, and the baked shells are filled with whipped cream, pastry cream (crème pâtissière) or custard, which are moist, protein rich and eaten without further co…

🔒4.3 Ingredients

Choux pastry uses only a few ingredients, so the quality, proportion and handling of each one decides whether the paste puffs into light, hollow shells or bakes flat and heavy. Water, fat, flour and eggs make the paste; salt and sugar season it. Because the pa…

🔒4.4 Choux pastry making process

The choux pastry making process is different from that of every other pastry: the paste is cooked in a pan before it is baked. Water (or milk), fat and salt are boiled, flour is stirred in and cooked to form a thick panada, the panada is cooled slightly and eg…

🔒4.5 Production of choux pastry products

Production of choux pastry products is the cooking, filling and finishing of choux paste to make items such as éclairs, profiteroles, choux buns, Paris-Brest, cream puffs, croquembouche and savoury gougères and beignets. The paste can be cooked in two ways, by…

🔒4.6 Packaging and storage

Packaging and storage of choux pastry products must deal with two opposite needs: unfilled shells must be kept dry so that they stay crisp, while filled products such as éclairs and cream buns contain dairy and egg fillings that must be kept chilled and sold q…
