Breakfast forms a critical part of food and beverage operations in Kenya, especially in hotels, restaurants, and institutional catering where the first meal of the day sets the tone for customer satisfaction. Preparing breakfast items requires not only culinary skill but also an understanding of diverse breakfast types to meet varied customer preferences. Equally important is maintaining freshness and quality control to ensure safe, nutritious, and appealing meals that comply with food safety standards such as HACCP. This chapter explores the types of breakfast offerings and the essential practices for freshness and quality control in professional settings.

4.1 Types of breakfast

Breakfast is the first meal of the day, eaten after the overnight fast, and in hotels it is often the meal every resident guest takes, so it strongly shapes their view of the establishment. Breakfasts are grouped into types according to their origin, content and size: some are light and cold, others are full cooked meals. Knowing each type tells the kitchen which items to prepare, which equipment and staff are needed, how long service will take and how to price the meal. Example: a hotel at Dunga Beach offers a continental breakfast in its room rate and a full English or Kenyan cooked breakfast at an extra charge, and plans its morning staffing on the number of cooked breakfasts ordered the night before.

American

The American breakfast is a large cooked breakfast that combines sweet and savoury items. It usually includes fruit juice; eggs cooked to order (fried sunny side up or over easy, scrambled or as an omelette); bacon, sausages or ham; hash brown potatoes; pancakes or waffles with maple syrup and butter; toast or muffins; cereals; and coffee, which is refilled through the meal. Portions are generous and eggs are cooked to each guest's request, so the kitchen needs a griddle, fryers and skilled short-order cooks.

English

The full English breakfast is a hearty cooked meal traditionally served in courses: fruit juice or fresh fruit; cereals or porridge; a cooked plate of fried, poached or scrambled eggs, grilled bacon, sausages, grilled tomato, sautéed mushrooms, baked beans and sometimes black pudding, fried bread or kippers; then toast with butter and marmalade; and tea or coffee.

  • Cooking skills: Frying, grilling, poaching and sautéing each item to the correct doneness.
  • Timing: Every item must reach the plate hot at the same time, so items with longer cooking times (sausages, bacon) start first and eggs are cooked last, to order.
  • Equipment: Griddles, salamanders, frying pans, ovens and hot cupboards.
  • Portion control: Standard numbers of each item (for example two rashers, two sausages, one tomato half) keep cost and appearance consistent.

Continental

The continental breakfast is a light, simple meal of mainly cold or room-temperature items with no cooked dishes. It includes bread items such as croissants, brioche, rolls, toast and Danish pastries with butter, jam, marmalade and honey; fruit juice; and coffee, tea or hot chocolate. An extended continental breakfast may add cheese, cold meats, yoghurt, cereals and fresh fruit.

  • Quick service: Little cooking means fast service, suitable for business guests and early departures.
  • Minimal equipment: Needs mainly a toaster, beverage equipment and refrigerated display.
  • Pre-preparation: Pastries and spreads are portioned in advance, which keeps quality consistent.
  • Lower cost: Fewer staff and ingredients make it the usual breakfast included in room rates.

Vegan

A vegan breakfast contains no animal products at all: no meat, fish, eggs, dairy or honey. It meets the needs of vegan guests and those avoiding animal products for health, religious or ethical reasons. Typical items are plant milks (soy, almond, oat) with cereals or porridge, fresh fruit and smoothies, wholemeal bread with avocado, nut butters or jam, tofu scramble, baked beans, grilled tomatoes and mushrooms, fried plantains, vegetable sausages, and chapati with bean or ndengu stew. The kitchen must prepare vegan items with separate, clean utensils, and check labels for hidden animal ingredients such as butter in bread, gelatine or whey.

Asian

Asian breakfasts reflect the food habits of East, South and South-East Asia and are often savoury and warm. Examples are rice congee (rice porridge) with toppings, steamed rice with miso soup, grilled fish and pickles (Japanese), noodle soups, dim sum and steamed buns (Chinese), idli, dosa with sambar and chutneys, parathas and masala tea (Indian). Hotels with Asian guests offer some of these items, and Kenyan kitchens with Indian influence already prepare chapati, bhajia and spiced tea.

Brunch

Brunch (breakfast and lunch) is a late-morning meal, usually served from about 10 am to 2 pm, especially on weekends and public holidays. It combines breakfast items such as eggs Benedict, omelettes, pancakes, waffles, pastries and fruit with lunch items such as grilled meats, salads, quiches, pasta and desserts, often as a buffet, with juices, coffee and sometimes cocktails. It suits leisurely, social dining and is popular with families and hotels that want to attract non-resident guests.

Traditional Kenyan breakfast

Kenyan breakfasts include tea (chai) with mandazi, chapati, bread or boiled arrowroots, sweet potatoes and cassava; uji (maize, millet or sorghum porridge); boiled eggs; and in some homes and hotels beans, matoke, liver or mbuzi stew. Offering these items uses local ingredients, supports local farmers and attracts local and international guests seeking an authentic Kenyan meal.

Buffet breakfast

Many hotels serve breakfast as a buffet, where guests help themselves from hot and cold stations and an egg station cooks eggs to order. A buffet requires a wide menu, hot holding at 63 degrees Celsius or above and cold display at 5 degrees Celsius or below, regular small replenishments rather than one large display, clear labelling of dishes and allergens, and staff to monitor, refill and clean the stations.
